What the hell is Pil Pil? Found in the culinary mecca that is the Basque country, Pil Pil is a sauce made with oil, garlic, chilli and the cooking juices of whatever delicious beast (often seafood) that is being cooked inside all whisked together. A sauce as old as time. It’s as delicious as it sounds and a pretty bob on perfect beer snack. I use the heads and shells of the prawns to give the oil a sweet, bisque-esque prawny punch before infusing with the more traditional pil-pil bits. This step really boosts the prawn flavour and even better, you don’t waste a thing.
