CONFIT 101: DIY HOISIN DUCK

Hi folks!

Welcome back to How I Cook+! This week we have returned to the land of confit. After I’d released the fish recipe last week, there was a volley of requests for the classic, the duck confit… So, here it is! In all it’s spartan glory, a duck confit is a simple as one, two, three! Brine, cook, roast!

The serve and garnish is dealer’s choice, but I’m a sucker for a hoisin duck. Short of making or buying wrappers/pancakes, I serve mine over short grain rice with hoisin, cucumber and fresh spring onions. It’s a blend of a few dishes and it’s utterly delicious.

For music this week it’s Wednesday and for a good read it’s a handful of short stories from David Szalay.
